Ingredients
1 cup sauerkraut
1/2 cup water
Whole wheat or Multi-grain tortillas
Shredded cheddar cheese - (2%, low fat, or fat free)
1-2 Granny Smith apples - peeled and thinly sliced.
Instructions
1. Put the sauerkraut and 1/2 cup water in a regular saucepan or skillet. Slowly heat up the mix until the water disappears. Remove to sauerkraut once complete. (Monitor closely so that the sauerkraut does not stick to the pan or burns once the water evaporates. You can always use a strainer if some water is left over or you decide to take out the sauerkraut early. )
2. Slowly heat up a good sized skillet with one tortilla layed out flat on the surface. (We sprayed a little Pam to make sure the tortilla did not stick to the skillet while cooking.) As the skillet is heating up, sprinkle the cheese onto half of the tortilla followed by the thinly sliced pieces of apple. Once that is done, just place an even amount of sauerkraut right on top followed by another small portion of shredded cheese.
3. Fold the other half of the tortilla covering all the ingredients. (Think taco!) Press gently with a spatula to help seal the tortilla together. Wait about 1-2 minutes so that the bottom of the tortilla gets to a golden brown. Flip the tortilla over, press gently down, and wait another 1-2 minutes so the other side cooks to a golden brown as well. Last step is to place everything on a plate or cutting board and gently cut in halves or quarters.
