Meat Empanadas - TastyPlanner.com

Empanadas are essentially stuffed pastries. The name comes from the Spanish verb “empanar” (to wrap or coat in bread.) Usually an empanada is made by folding a thin circular-shaped dough patty over the stuffing, into a semicircular shape.
Ingredients
3 tubes homestyle biscuits (small)
1 lb ground beef, turkey, or chicken
6 hard boiled eggs
1 cup green olives (optional)
1 or 2 large onions
3 Cloves Garlic
3 T ground cumin powder
1 tsp chili powder
2 tsp sugar

Filling
Heat some oil in a large saucepan. Mince the onions and garlic, and add to the pan. Cook until the onions become translucent. Add the ground meat. Break it up with with a spoon and cook, stirring until lightly browned. Drain off fat.
Mix in the cumin, chili powder, and sugar. Remove from heat.
Chop the hard boiled eggs and halve the stuffed olives. Carefully mix into the meat mixture. Add salt and pepper to taste.

Preheat the oven to 400* F
Flour a rolling pin (or your palm) and roll/smash out the biscuits until they are about 1/8 of an inch thick.
Place 2 tablespoons of the filling in the center of each wrapper. Dampen the outer perimeter of the dough with water.
Fold over, forming a semicircle. Pinch the edges together very well and fold the sections into the middle. Place the folded empanadas on a greased cookie sheet. (Optional: brush with egg before baking for a nice, golden browned color.)
Bake 15-20 minutes, or until golden brown.
