A great way to eat oatmeal and feel like you’re treating yourself. Wonderful the next day (or two or three or four) heated in the microwave.
Try variations of fresh fruits in the bottom of the pan to change it up. Chocolate(carob) cherry, fresh strawberry w/fresh banana, peaches, add some vanilla and add mixed berries for berries and cream, the possibilities are endless.
I took out the EVCO because the texture isnt as good as it was with the EVOO.
Ingredients
1/3 cup EVO oil, or grapeseed oil
1/2 cup Natural sweetener(i.e. Agave nectar, date sugar etc)
1 large egg, beaten
2 cups uncooked rolled oats
1 1/2 tsp. baking powder
1/2 tsp. sea salt
3/4 cup vanilla soy milk
Instructions
Combine oil, sugar and egg. Add oats, baking powder, salt and milk. Pour into a small, greased casserole dish. Bake at 350 for 30-35 minutes. Serve warm with soy milk and cinnamon.

EVC oil= extra virgin coconut oil. Olive oil or similar may be used also. This is meant to be healthy so stay away from vegetable oils and lards.
I’ve also made some adjustments to the original recipe. I reduced the salt. The original amount was over powering for this type of dish, and I upped the milk so it would be a bit more moist.
I added frozen cherries and semi dark chocolate chips to mine, wow it was awesome!
I just made this last weekend and it was perfect! Very moist, all ingredients worked perfectly. The only changes I made were the following: used 1/2 organic honey & 1/2 lite agave; used rice milk + 1 tsp vanilla in place of soy milk.
I had to make another comment here. I love this recipe! I have now made it dozens of times and have made variations in the types of sweeteners used. This last time I used 1/2 agave and 1/2 pure maple syrup – we enjoyed it immensely. I still use rice milk and add vanilla. Thank you so much for this recipe! It really is wonderful!
