Chicken Tortilla Soup - TastyPlanner.com

My husband and I have had chicken tortilla soup at Cracker Barrell before and we always tend to mention things we would do different when we eat it. So this is a little bit of the ideas that we’ve had. I found a basic recipe on www.recipezaar.com and I added things that we like to it. If you’re making this for kids, you may want to check the spices. Enjoy!

Ingredients
1 medium onion, chopped
3 garlic cloves, minced
3 or 4 bell peppers, chopped
1 tablespoon olive oil
2 teaspoons chili powder
1 teaspoon oregano or italian seasoning
1 can Rotel tomatoes with Cilantro
10 3/4ounce)can chicken broth
10 3/4ounce)can water
1 cup corn
1 cup white hominy (optional)
14 1/2ounce)can black beans, rinse and drained
1/2 tsp. dried cilantro
2 boneless chicken breasts, cooked and chopped
Instructions
In a medium stock pot, saute onion, garlic, and bell peppers in oil.
Stir in chili powder, oregano/Italian seasoning, tomatoes, broth and water. Be sure to really scrape down the sides of your stock pot to deglaze the pot.
Bring to boil and simmer for 5 to 10 minutes.
Add corn, hominy (if using), chili peppers, beans, cilantro, and chicken. Simmer for 10 minutes.
Ladle soup into individual serving bowls and garnish with avocado, grated Jack cheese, chopped green onion, or crushed tortilla chips.
For some reason it keeps cutting this off the ingredients…possible garnishes could be: avocados, chopped monterey jack cheese, shredded green onions, chopped.
I’m thinking of making flour tortilla bowls to serve this in. I’ll be putting a recipe on here for how I make my bowls.
