Dotta's Cinnamon Rolls - TastyPlanner.com
Chef: Bakerfoodygirl
This is my grandmother’s cinnamon roll recipe. These are not your normal sticky buns, these are made from her classic biscuit dough and rolled and filled with yummy filling.
Recipe Source: My Grandmother
Ingredients
3 cups all purpose flour
4 teaspoons baking powder
1 tablespoon granulated sugar
1 teaspoon salt
1/2 cup (1 stick) butter
1/4 cup shortening
1 1/4 cups milk
1/2 cup (1 stick) butter, melted
8 tablespoons granulated sugar
4 tablespoons ground cinnamon
1 cup powdered sugar
6 teaspoons orange juice, milk, or water
Instructions
1. Preheat oven to 450 degrees. Line a cookie sheet with alumnium foil and set cookie sheet aside. 2. In your mixer’s large mixing bowl stir together the flour, baking powder, sugar, and salt. Cut butter and shortening in to small pieces and slowly add to dry mix, mix this with the pastry attachment, the texture should begin to look like bread crumbs. Add milk all at once, the dough will become very sticky at this stage. 3. Rub a little flour on your clean hands and turn dough out onto a lightly floured surface. Knead dough by folding and gently pressing dough for about 4 to 6 strokes or just until it starts holding together. Pat or roll dough until its about 3/4” thick and about 10” by 12”. 4. Using a pastry brush, brush the melted butter on top side of rolled out dough. Mix sugar and cinnamon together in a small bowl, sprinkle on top of butter coating. If you are adding nuts or raisins, sprinkle on top of sugar and cinnamon. 5. Carefully roll dough into jelly roll like shape, starting from the longer side. Make sure that you roll it together tight so that it will keep its shape. Once the long roll is made cut 2” rolls and lay the rolls onto cookie sheet, make sure that there is about 1 1/2” between rolls for rising and spreading. 6. Bake for 8 – 10 minutes, until the rolls just start to turn golden on the edges. 7. Mix together powdered sugar and enough orange juice to reach drizzling consistency. Drizzle over warm rolls. Serve warm.
