Portuguese "Risotto" - TastyPlanner.com

This is a great “comfort” food dish that can also be made with chicken or Italian sausage, if you choose. The Portuguese version has spicy linguisa and the juices of this sausage flavor the entire dish perfectly! I have to admit, I am partial to linguisa, as I’m of Portuguese decent!

Ingredients
1 lb linguisa sausage (2 large links) fully cooked
1 large zucchini squash
1 cup white rice
2 tbsp butter or margarine
2 cups chicken broth
1 tablespoon minced garlic
2 tbsp olive oil
If using fresh linguisa, be sure to cook it thoroughly!
Instructions
Heat dutch oven on medium high heat and add olive oil and garlic. Saute garlic in olive oil for about 2-3 minutes. Chop linguisa into equal sized chunks and add to olive oil and garlic in dutch oven. Add ½ cup of chicken broth and allow to simmer for 10 to 15 minutes. Meanwhile, cook rice in rice cooker completely. Add zucchini to dutch oven, as well as salt and pepper to taste (I prefer more pepper to add an extra spiciness to the dish). Simmer until zucchini is fork tender. Add rice, 1 cup chicken broth, butter and stir for about 2 to 3 minutes. Cook on very low heat and add rest of chicken stock just until creamy, but not soupy! Simmer for about 2-5 minutes longer and serve warm! Add more pepper, if desired, prior to serving.
