Curried Pork Tenderloin - TastyPlanner.com

This is a delicious, low-fat meal!
Ingredients
3 med-sized pieces of pork tenderloin
1 tbls curry powder
1 tbls veg oil
1 onion, chopped
1 cup apple juice
1/2 cup of tart apple chunks
1 tbsp flour
3 tbsp water
Instructions
Season the pork tenderloin with curry powder and let stand for 15 minutes.
In a large, heavy skillet, heat the oil over medium-high heat. Add the pork and brown about 3-5 minutes on each side. Remove to a plate.
Add the onions to the pan and saute until dark golden. Add 1/2 cup of the apple juice, lower the heat and simmer until the liquid is reduced to half.
Add the chopped apple and the remaining 1/2 cup apple cider. Stir and simmer for 2-3 minutes. While its simmering, mix the flour and water well in a teacup. Spoon some of the hot sauce into the teacup, mix it in, and then pour the contents of the teacup evenly into the skillet while stirring, mix well.
Bring contents of the pan to a simmer and cook, stirring, for a minute or two. Return the pork to the skillet and simmer with a lid partially covering the pan for another 5 minutes.
Serve with rice. A green veg like broccoli goes nicely.
