A hearty vegetarian meal, inspired by Eastern Europe!
Ingredients
1/4 cup veg oil
2 cups finely chopped onions
1 clove garlic
1 tbsp paprika (good quality Hungarian kind is great!)
1/2 tsp salt
1/4 tsp pepper
2 lbs fresh whole mushrooms
1/4 cup red wine
1 tsp dried herbs (marjoram or thyme or rosemary - see how you feel!)
1/2 cup chopped parsley
Instructions
Fry onions and chopped garlic for 10 min on medium in a big pot. Add paprika, salt, and pepper and fry for 2 more minutes.
Add mushrooms and saute for 10 minutes.
Add wine and herbs, cover, and simmer, stirring occasionally. As liquid reduces, add water or stock a few tablespoons at a time. Simmer until onions cook down completely to a naturally thick gravy – about 45 minutes. Thicken by adding a bit of flour blended with cold water, if needed.
Stir in parsley and serve over hot noodles or rice.
