An old state fair standard!
Ingredients
1 lb ground meat (for low-fat use turkey, but normally use beef)
1 sm onion
1 can low-sodium condensed tomato soup
1 cup low-sodium stock
1 cup long grain rice
1/4 tsp pepper
1 tbsp worchestershire sauce
Instructions
Mix soup and stock in a med-large non-stick pot and bring to a simmering boil.
Grate the onion into a large bowl, and add meat, rice, pepper, and worchestershire sauce and combine the ingredients together. Mix them together well with your hands. Form into 1-in meatballs and drop them as you make them into the simmering sauce.
Cover and simmer on low for 45 minutes. Do not stir at any time! Turn off the heat and allow porcupines to rest, covered, for 5-10 minutes.
Optional: serve on plates and sprinkle grated cheese on top of each. Goes well with a side dish of peas.
