Red Bean and Lager Chili - TastyPlanner.com

A veagen chili that tastes better than most non-vegetarian chilis. The lager is the secret ingredient that gives this popular stew its robust flavour. A micro brewed lager beer with no preservatives is the best way to go with this recipe.

Ingredients
1 tbsp ground cumin
1/4 cup olive oil
2 onions, diced
5 cloves garlic, crushed
1/2 Stalk Celery Chopped
1 hot banana chili, minced
1 green pepper, chopped
2 tbsp chili powder
2 tbsp Cocoa powder
1 2inch cinnamon stick
6 cups Diced tomatoes
2 cups red kidney beans, cooked
1 carrot, chopped
12 oz. micro brewed lager beer
1 cup cilantro, chopped
Instructions
1. Toast the ground cumin in a dry, hot pan to release the flavour. Set aside.
2. In a saucepan, saute the onions, garlic, celery, banana chili and green pepper in oil until soft.
3. Stir in the cumin, chili powder, cocoa and cinnamon stick.
4. Add the remaining ingredients, except the cilantro, and bring to a boil. Reduce heat to low and let chili simmer until all vegetables are tender.
5. Remove from heat. Remove cinnamon stick, add cilantro and sea salt to taste.
notes: ground soy works well with this recepe can use oven roasted plum tomatoes instead of diced
