Jael's Very Own Potato Soup - TastyPlanner.com

A deliciously creamy potato soup, good for any time of day. Including breakfast.
Ingredients
8 c potatoes
3 Tbsp butter
1 onion
3 T flour
2 qts water
1 tsp salt
1/2 tsp pepper
1/2 C heavy cream
1 Tbsp parsley
3 Tbsp butter
Instructions
Peel (or don’t peel) and chop 8 cups potatoes. (You can let them stand in water to prevent browning, but be sure to drain it off before adding to soup.)
Stir 3 T butter and onion together until butter is melted, then stir and cook onion for five minutes in the butter without browning. Remove from heat.
Stir 3 T flour in with the onion and butter. Add 2 quarts water. Salt and pepper generously. I don’t measure. Return to heat. Add 1/2 – 2/3 of the chopped potatoes to the water. Bring to a boil. Simmer 30 minutes.
Add remaining chopped potatoes and simmer 20 minutes more. Remove from heat.
Add heavy cream, parsley, and 3 T butter. Stir in. Add more salt, pepper, and onion powder as necessary.
NOTE: Topping with grated cheddar when serving is yummy. Garlic powder is yummy. Lime Jell-O with pineapple on the side is yummy, too.
When you re-heat it, make sure not to boil because of the cream.
