Tomato Salsa Salad - TastyPlanner.com

A chunky and satisfying salad, easily doubled for a crowd.

Ingredients
4 scallions, chopped
1 garlic clove, finely chopped
4 tbsp. olive oil
1 tbsp lemon juice
4 slices un-smoked bacon (optional)
4 hardboiled eggs (optional)
Instructions
1 Finely chop 8 oz. of the tomatoes and combine with the scallions, parsley, garlic, oil and lemon juice to make salsa. Season to taste with salt and pepper. Cook the new potatoes in lightly salted boiling water until just tender. Drain and rinse under cold running water. Cut into thick slices.
2 Cook the bacon for 3-4 minutes over high heat until crisp. Allow to cool slightly then break into bite sized pieces. Cut the remaining tomatoes and the eggs into eights.
3 Toss the potatoes, eggs, tomato slices and salsa into a serving bowl. Season to taste. Scatter the bacon over the top and serve on a bed of lettuce
Notes: Also nice to add some tortilla chips, cheese, jalepenos
