very simple delicious winter soup
Ingredients
300g parsnips
300g sweet potato
1 tbs. olive oil
1/2 pint vegetable stock (broth)
1/2 pint soy milk
1/2 pint water
2 tbsp chopped coriander (cilantro)
1 pinch nutmeg
1 fresh ground pepper
Instructions
1) peel and chop the parsnips and sweet potato and boil in the vegetable stock for 15 mins or until soft. 2) blend until smooth and return to the pan with the remaining ingredients. gently heat until just simmering 3) serve!
note: for a richer flavor, saute the veggies in the olive oil until starting to brown before adding to stock.
