Ingredients
2 T. vegetable oil
1 lbs. round roast, trimmed
2 onions, sliced
1 c. dry red wine
1/2 c. ketchup
6 T. light brown sugar
3 T. vinegar
1/2 t. powdered ginger
4 cloves garlic, pressed
1/2 c. beef broth
Salt and pepper to taste
Instructions
In a large skillet, heat oil over medium high heat and brown roast on all sides. In the bottom of your crock-pot, place the sliced onions first, thenthe browned roast. Mix remaining ingredients in a bowl and pour over roast; cover and cook on low 6-8 hours or until meat is tender and can be shredded with a fork. Pour cooking juices into a saucepan and simmer on the stove until reduced, about 10 minutes. Serve sauce over the top of the beef.
