1. Grilled Vegetables

An incredibly simple dish to cook, the effort to taste ratio is absolutely amazing. An awesome summertime snack, grilled vegetables are perfect for making over a barbeque grill. 

A great side or snack, grilled vegetables will go down a treat. Plus, they’re super healthy and packed full of nutrients. Perfect for serving alongside classic burgers and hotdogs. 

Ingredients

Zucchini – 1

Yellow Squash – 1

Cremini Mushrooms – 8Oz

Red Onion – 1

Green Bell Pepper – 1

Red Bell Pepper – 1 

Corn Ear – 1

Olive Oil

Salt and Pepper

Dressing

Pesto

Tzatziki

Greek Yogurt

Method

Step 1

Preheat your grill to a medium to high heat and spray using a non-stick spray. Cut all your vegetables to a similar size and shape, preferably into small chunks. Thread a mixture of vegetables onto 4-5 metal skewers. Season with salt and pepper and drench in olive oil. Grill for around 8 minutes on each side until the vegetable are lightly charred. Take them out and serve with whatever sauce or dressing you prefer. Enjoy. 

2. Chicken Nacho Grills

A fun and creative way to serve chicken, chicken nacho grills are a family favourite for ensuring the kids have something delicious to munch on at lunch or dinner time. This recipe doesn’t require much and is very simple to make, it can be made in under 20-30 minutes.

Here’s how to make it.

Ingredients

Chicken Breast – 4

Tortilla Chips – 40g bag

Grated Cheddar Cheese – handful

Pot Soured Cream – 142ml

Salsa – 200g tub

Method

Step 1

Preheat your oven to fan 180C/200C/gas 6. While the oven is heating up, crush up your tortilla chips (this is a great part for your kids to help with). Place your chicken breasts onto a baking tray that is non-stick. Season the chicken breasts before slashing with a knife 3 times on each breast. Place one table spoon of salsa and soured cream onto each chicken breast.

Step 2

Start to sprinkle the crushed-up tortilla chips all over each of the chicken breasts before adding cheese. Then roast for around 15-20 minutes until all the toppings have started to turn golden brown. Serve on a plate with a healthy side salad and enjoy. 

3. Chicken Tikka Skewers

An easy low-calorie dish to cook on any occasion. You can whip this one up in around 20 minutes, perfect if you only have time for a quick snack. Alternatively, this is a great choice to make for summer barbeques. 

Here’s how to make it. 

Ingredients

Chapattis (warmed) – 4

Cherry Tomatoes – 250g pack

Chicken Breast (cubed) – 4

Curry Paste – 2 tbsp

Low Fat Natural Yogurt – 150g pot

Side Salad Ingredients

Cucumber (sliced) – ½ 

Lemon (juiced) – 1

Lamb’s lettuce – 50g pack

Coriander Leaves (chopped) – handful

Red Onion (sliced) – 1

Method

Step 1

Soak 8 skewers (wooden) in a bowl filled with water. Mix the curry paste and yogurt together in a separate bowl, then add the chicken, leave to marinade. Toss the contents of the salad in a large bowl and leave to chill before serving.

Step 2

Shake the chicken to rid any marinade, then add the chicken pieces as well as the cherry tomatoes to the now soaked skewers. Grill on a medium heat for 15-20 minutes, occasionally turning until browned.

Step 3

Stir your lettuce into the salad and divide across 4 plates. Add 2 chicken tikka skewers to each plate and serve alongside your warmed chapattis.

4. Sticky Chicken Drumsticks

An easy and quick to make snack option that everyone is sure to love and appreciate. Chicken drumsticks are sure to be a family favourite, plus the marinade can be used with a range of other meats, vegetables and many types of fish.

Here’s how to make it.

Ingredients 

Chicken Drumsticks – 8

Soy Sauce – 1 tsp

Lime Zest – 1 Lime

Sweet Chilli Sauce – 4 tbsp

Grated Root Ginger – 1 tsp

Method

Step 1

Mix your ginger, chilli sauce, lime zest and soy sauce together. Pour the mixture over your chicken drumsticks. Let your drumsticks marinate for as much time as you can. Remember if you’re going to marinade them for 30 minutes or more they will need to be placed in the fridge.

Step 2

Preheat your oven to gas 5/fan 170C/190C. Put your chicken drumsticks into a baking tray, be sure to get rid of any of the excess marinade. Roast the drumsticks for 20 minutes, pour on the remainder of the marinade, cook for another 5 minutes until they have browned. Serve and enjoy. 

5. Cajun Chicken 

A favourite in many households, Cajun chicken is simply delicious all year around. 

Here’s how to make it. 

Ingredients 

Chicken fillets – 4

Paprika – 1 tbsp

Cayenne Pepper – ¼ tsp

Dried Thyme – 2 tsp

Dried Onion (flakes) – 1 tsp

Sunflower Oil – 1 tbsp

Guacamole – 200g tub

Method

Step 1

Dry chicken and slice diagonal on the smooth side. Mix the spices and seasoning and pour on a plate. 

Step 2

Roll the chicken in oil and then in the spices and seasoning. Heat over a grill, barbecue or griddle pan and cook for around 5-6 minutes each side. Serve alongside some guacamole. Enjoy.
