Did you know that you can prepare sweet potatoes in the microwave? Just poke holes in your potatoes, cover with olive oil, and place them in the microwave for five minutes.

While that’s getting ready, grab your can of black beans and warm them up on the stove. Then add onions, bell peppers, and jalapenos to the mixture. Once the sweet potatoes are done, cut the potatoes down the middle and place the black bean mixture inside.

3. Sheet Nachos

Taco Tuesday is fun but nachos are cool too! You can get really creative with your nachos and transform them into a full meal that’s flavorful and healthy!

5. Cajun Chicken Pasta

Step outside the box a little bit with this cajun chicken pasta recipe that’ll fill you up on flavor for days!

For this recipe, you’ll need bow tie pasta, butter, garlic, chicken, cajun seasoning, cream cheese, milk, salt, and parmesan. It sounds like a lot but we promise it’s not!

You can choose to prepare the chicken yourself or buy precut chicken to make the process easier. In a separate pot, boil pasta in part water and part chicken stock for flavor. Drain and set aside while the other ingredients are being prepared.

In a large skillet, melt butter and add garlic. Then add the chicken, salt, and cajun seasoning and allow for it to cook for about four minutes. Next, combine milk and cream cheese into the skillet and cook until creamy.

Once this is complete, you’re ready to place the toppings with the pasta, add parmesan and serve!
